Sumptuous Seafood Dinner with Guest Chef Jen Flock (6/20)

 

Jen Flock, corporate chef at Browne Trading Company in Portland, seafood supplier to many of the nation's best seafood restaurants, will prepare a multi-course meal to delight all who love the freshest seafood and fine cuisine.

 

The menu will consist of Maine peekytoe crab with fennel and apple over greens served with St Andre crostini and Calvisius caviar; seared bigeye tuna steak with kholrabi, carrot and cabbage slaw; and seasonal berry shortcake with lemon curd and Chantilly cream. This delicious repast will be served in the beautiful Kitchen Garden Café, which looks out over the Central Gardens at Coastal Maine Botanical Gardens.

 

Jen received her culinary degree from Johnson & Wales University in Providence. She has garnered experience and expertise in diverse aspects of the food industry, in Maine most notably during five years at the Fore Street restaurant in Portland.
